The Mantle Restaurant at TAFE...27 May 2009

My it's been such a long time since the last post!!! Running way behind here but here are meals our class made on 27th May...only 1 month to go and the course will finish!!!

This is the whiteboard used in class for the 'Chef de Cuisine' for the evening to write down which class member does what course...and if you look to the bottom right you will see that the Teacher gave me Sous Chef...Assistant Chef for the evening!!!











Hereunder on the left is Lindsay...'Chef de Cuisine for this evening...and straight under to the right is John at the cooking pot...with the Soup for Entree!!!

Brioche Bread & Butter Pudding with Coffee Anglaise...

Duo of Chocolate Mousse with Tuille Biscuit...
My favourite for the evening...Barbeque Duck, Roasted Sirloin and who can go past that Duo of Chocolate Mousse!!!

  4. Well done Dzintra! Sous Chef. Did you enjoy it? I don't think there is a single dish there I wouldn't like to try and that whole salmon is exquisite! I think the chocolate mousse is one of the stand out party pieces - looks incredible with (hopefully) not too much work!
